Here’s the thing about me: I can’t freaking wake up in the morning ( possibly due to a medication I’m taking )

It’s like there are cinder blocks on my eyelids!! I mindlessly press snooze that goes off every 9 minutes. Dylan rarely has any luck trying to get me up. Regardless of how much sleep I get. It can be 6, 7, 8+ hours, but it’s the same thing. If Nala starts barking incessantly, still knocked out.

You get the point.

I mean, once I’m up, I’m like the freaking energizer bunny. I’m not one of those people that needs their coffee in the morning. I drink coffee because I like the boost. I usually have coffee after I’ve already been up for a couple hours.

On the days I work the morning shift, I usually don’t wake up until around 7AM. To be at work by 8, I have to leave my house at 7:30 AM at the LATEST. If not, I will be late. ( Damn you valley traffic !! )

That gives me half an hour to brush my teeth, pee, take the dog out, feed the dog & get dressed.

Needless to say, I don’t have enough time to make breakfast. I need something that’s quick, easy to eat on the go and filling enough to keep me satisfied until break-time.

Lately my go to has been this tofu scramble. UGH IT IS SO FUCKING GOOD.

I know the thought of eating tofu sounds awful to some people. In the beginning, it sounded awful to me too. If you have an open mind, you’ll find that you can make some bombbb recipes with tofu.

YUMMY  VEGAN RECIPES ARE NOT HARD TO FIND PEOPLE!!! ( unless you can’t cook, then you may have some trouble, honestly lol )

I like to make a big batch on Sunday to last me for the week.

Trader Joe's Medium Salsa


Recipe from my friend Kari


♡ 1 package of tofu

♡ 1 bag of spinach

♡ 1 tbsp nutritional yeast

 ♡1/2 tsp chili powder

♡ 1/2 tsp ground cumin

♡ 1/2 tsp season salt (any kind)

♡ 1/2 tsp tumeric

♡ 1tsp olive oil

♡ Pinch of garlic powder

♡ Pinch of chicken seasoning

♡ salsa of your choice

♡ tortillas


1. Mix all the seasonings.

2. Put the olive oil in a pan and throw in the whole bag of spinach ( looks like a lot, but it will shrink to nothing )

3. Drain the tofu and put it in a pan

4. Mash up the tofu a little and add the seasoning

5. Mix and keep mashing until at desired consistency ( I like mine pretty chunky )

6. Add the rest of the seasoning

 7. Heat up tortilla, add the scramble, salsa & any other ingredients of your liking & enjoy !


On days where I want to switch it up, I will add meatless breakfast sausage & some onion.

    Im not vegan however I think reducing your meat in take is beneficial in a variety of ways. I love scrambled egg and can’t see why I can’t switch it every now and again to Tofu scramble.

    Ugh. I hate mornings too. And ironically coffee makes me more sleepy lol! We love tofu. We only tend to cook and eat it one way though. Can’t wait to try this! Looks delicious.

There’s actually a reason that you get more tired if you have coffee firs thing in the morning 🙂 researchers suggest you wait at least an hour after you wake up when your body isn’t producing as much cortisol! it’s pretty interesting! you should do some research 🙂 hope you try & enjoy!! xx nicole

      Yesssss Sharon!! You have to try it!! Better yet, I’ll come for a girls weekend in Palm Springs and make it for us for breakfast before we hang out by the pool ! But seriously. Try it!! I never thought I’d like tofu ( it’s a texture thing ) but it actually works as a substitute for egg here since they’re the same consistency
